Any recipe that starts with a pound of butter has got to be good, right? These have been my favourite Christmas cookie since I was little. I managed to pry the recipe out of my mother’s hands – it’s one of her specialties. And don’t tell her – but I’m going to share it with you. It’s so easy it’s silly. But it’s SO good. The lightest fluffiest shortbread you’ll ever taste.
1 lb butter
1 cup icing sugar
1 tsp vanilla
3 cups flour
Add the butter and sugar to your mixing bowl. Whip them both til fluffy. The longer the better. Slowly incorporate the flour on low speed, then the vanilla. Scoop teaspoonfulls onto an ungreased baking sheet, decorate, and bake for 8 minutes at 350.
