After disastrous attempts at Imperial Cookies back when I started this blog (which you can re-read here, here, and here if you like), I swore off of any attempts to make them again. A friend brought some in to the office the other day and they looked so delicious I had to try one (WTG). The recipe, she explained, was pretty simple, so I thought I’d give it a try. One. More. Try.
And I am pleased to report that they turned out quite nicely! Yay!
A little tip on spreading the icing – as I tried several different ways to figure out the best way to get the nicest spreading consistency on top – is to dip the cookie in the icing, then use the back of a plastic spoon, to spread the icing to the edges of the cookie. Why plastic works better than metal for this purpose is beyond my scientific capabilities, but if you know, please let me know so I can inform the others!
